Cheese Puffs



Ingredients

•1 cup milk
•1/4-pound (1 stick) unsalted butter
•1 teaspoon salt
•1/8 teaspoon freshly ground black pepper
•1 cup all-purpose flour
•4 extra-large eggs
•1/2 cup grated Gruyere, plus extra for sprinkling
•1/4 cup freshly grated Parmesan
•1 egg beaten with 1 teaspoon water, for egg wash

Directions
Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
In a saucepan, heat the milk, butter, salt and pepper, over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
Spoon the mixture into a pastry bag fitted with a large plain round tip ( You can also use ziplock bags if you do not have pastry bag). Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside

Graham Cracker Crust

Ingredients
1 1/2 cups crushed graham crackers
1/4 cup sugar
1/3 cup butter, melted
Directions
1.In a small bowl, combine the crumbs and sugar; add butter and blend well. Press onto the bottom and up the sides of an ungreased 9-in. pie plate.
2.Refrigerate for 30 minutes before filling, or bake at 350 degrees F for 7-8 minutes or until crust is lightly browned. Cool on a wire rack before filling.

Key Lime Pie


For the Filling -
•3 large egg yolks
•1 (14-ounce) can sweetened condensed milk
•2 teaspoons grated lime zest
•1/2 cup freshly squeezed lime juice
•1/2 cup heavy cream
•1 9-inch graham cracker crust

Directions
Preheat the oven to 350 degrees F.
In a medium bowl, whisk together the egg yolks and condensed milk. Stir in the lime zest, lime juice, and cream. Pour the filling into the crust and bake about 30 minutes or until firm. Remove pie from oven.

Gobhi Manchurian




Ingredients:

Cauliflower – 1 medium, cut to bite-size florets
Oil – for deep frying

For the batter:

All-purpose Flour – 5 Tbsp
Corn Starch – 3 Tbsp
Salt – 1/4 tsp
Red Pepper powder– 1/4 tsp
Water – 1/4 cup plus 2 Tbsp

For the sauce:

Oil – 1 Tbsp
Onion – 1 medium, chopped in big cubes
Green Capsicum - 1 medium chopped in big cubes

Green Chilies – to taste, cut diagonally
Ginger Garlic paste – 2 table spoons
Maggi hot and sweet Ketchup – 4 Tbsp
Soy Sauce – 4 tsp or to taste
White Vinegar – 2 tsp
Water – 4 Tbsp
Corn Starch – 2 tsp
Green Onions – 2 stalks, cut diagonally for garnishing

Method:
To make the batter -
1.Add All-purpose flour, Corn Starch, Salt, Red Pepper powder and Water to a small bowl. Mix until there are no lumps.
2. Coat Cauliflower pieces well with batter and deep fry until Cauliflower is a medium dark brown color.
3.Finish frying all of the Cauliflower.

To make the sauce-
1. Heat Oil in a medium non-stick pan.
2. Add Onions, Green Chilies and Garlic and cook until Onions are light brown.
3. Add Capsicums and Maggi hot and sweet Ketchup and cook until Oil starts to separate from mixture.
4. Add Soy Sauce and Vinegar and mix well.
5. Mix 2 tsp Corn Starch with 4 Tbsp Water and add it to the pan. Cook for 1-2 minutes until sauce starts to thicken.
6.Add the fried cauliflowers to the pan with the sauce. Toss well to coat Cauliflower completely.
7. Add Green Onions and toss again.
8. Serve immediately.
